The theme of week six was finger foods, and I decided to go with one of my favorite recipes that I only make maybe once a year: Pimento Cheese Stuffed Hush Puppies. These are awesome. Hands down perfect. The recipe is from the Southern Foodways Alliance Community Cookbook, and I respect their organization so much that I will not reprint the recipe here. Here's a hint on how to make them: you stuff hush puppies with pimento cheese. I'm sure any variation would be awesome. Here's the serious eats write up on the cookbook that links to a couple of recipes from the book.
